These firm, meaty chestnuts by Clement Faugier are cooked in water and can be used for many recipes: stuffing, soups, whole as side dish with meat, pureed with sweet potatoes, in sweet breads, or to accompany desserts. Tan colored, these chestnuts are peeled but left intact in whole form.
