Delicious Original Pancakes

You’ll Need

  • 2 cups Iya’s Cassava Flour
  • 1 cup vanilla yogurt
  • 1 cup low-fat milk
  • 2 eggs, 2 Tbsp oil, 2 Tbsp Maple syrup, 2 tsp sugar, 2 tsp baking powder, ¼ tsp sea salt, ¼ tsp cinnamon

Instructions

1. Combine ingredients with a mixer.

2. Heat a non-stick pan.

3. Pour approx. ¼ cup of batter for each pancake.

4. Cook each side for about 3 minutes or until golden brown. Enjoy with your favorite pancake toppings Let’s Eat!

Moist Chocolate Cake

Ingredients:

  • 2.5 cups Cassava Flour
  • 1 cup unsweetened cocoa powder
  • 1 cup honey or maple syrup, 1 cup mayonnaise
  • ½ cup milk (can also use almond milk), 3 eggs, 1 cup sugar, ¾ cup oil or melted butter, 2 tsp baking soda, 2 tsp vanilla extract
  • ½ tsp salt, 1 cup hot water (add this last carefully)

Instructions:

  1. Preheat oven to 350 degrees F. Grease baking pan and line with parchment paper. Wet mix - Combine sugar and oil or butter until smooth then add all wet ingredients except the hot water(this comes last)
  2. Dry mix - Mix all dry ingredients including cassava flour, cocoa powder in separate bowl and then pour in wet mix in until smooth. Carefully mix in hot water (this is what increases cake moisture)
  3. Pour batter into pan and bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 to 35 minutes.Let cool & serve

Cassava Flour Tortilla

Ingredients:

  • 1 ½ cups cassava flour
  • ½ tsp. salt, ¼ cup olive oil, ¾ cup warm water
  • Optional – ¼ tsp garlic powder for a nice flavor surprise

Instructions:

  1. Mix together all the ingredients until a nice dough begins to form. If dough is too wet, please add cassava flour, if too dry add a tbsp of water at a time till tortilla consistency
  2. Knead the dough until smooth and divide into six dough balls.
  3. Use a tortilla press or roll each dough ball between two pieces of parchment paper until thin
  4. Heat a nonstick skillet over medium high heat. Place tortilla on the skillet for about 1 min on each side and flip
  5. Remove, stack on a plate & cover to keep warm. Serve with your preferred fillings.
