Vegetable Jollof Rice Ingredients: - 3 cups of long grain white rice
- 1.5 cups Any Tomato Based Simmer Sauce, 2 cups chopped spinach, kale or any desired greens
- 2 tsp Iya Foods Jollof Rice Seasoning
- ½ tsp Iya Foods Chili Pepper Flakes
- 1 Tbsp Iya Food Vegetable Mix, 2 Tbsp Vegetable Oil or 1 Tbsp Butter, 1 tsp salt
Instructions: - Rinse rice a couple times and strain to drain water
- Combine rice and all the ingredients (except the green veggies) in an Instant Pot or a medium sized pot. Add water at approx. ratio 1.5 water : 1 cup rice
- Cover, seal and push ‘Rice’, if your Instant-Pot does not have a ‘rice’ function, select ‘manual’ and then set for 10 mins on high pressure. For medium sized pot, cover and cook for 20 – 30 mins on medium heat. Once cooked, garnish with greens and serve

Tip–To achieve a stronger smoky flavor, traditional caterers in West Africa do 2 things - Intentionally allow the base of the jollof rice to burn a bit on high heat in first 10 mins.
- Then lower heat to medium for the rest of the cooking time while pot stays covered so the burn base can further smoke the rest

Plantains - You can find plantains at many grocery stores. Buy slightly ripe i.e. plantain peel looks yellow. Half a plantain/person is a good estimate. Cut open peel and slice plantain about an inch thick
To cook - Broil, grill, roast or bake in oven at 425 for about 15 mins till golden brown. Fry in oil for about 5–8 mins till golden brown
