Yogurt Plantain PancakesIngredients (4-6 Servings): - 2 cups plantain Flour
- 1 cup vanilla yogurt, 2 eggs, 1 cup low fat milk, 2 Tbsp oil or melted unsalted butter
- 2 Tbsp of Pure grade Maple syrup
- 2 tsp sugar, 2 tsp baking powder, ¼ tsp sea salt, ¼ tsp cinnamon
Instructions: - Mix all ingredients in a mixer or bowl
- Heat up gridle or pan. Add some water if too thick or more plantain flour if too runny.
- Pour in griddle and leave for about 3 mins on each side till golden brown
- Serve hot with your favorite toppings
| Easy Plantain WafflesIngredients (4-6 Servings): - 1.5 cups Iya Foods Plantain Flour
- ½ to 1 cup vanilla yogurt, 2 Tbsp oil or melted unsalted butter, 2 eggs, 1 ripe banana optional (optional), 2 tsp sugar, 2 tsp baking powder
- ½ tsp sea salt, ½ tsp cinnamon or nutmeg
- 1 cup milk (can also use almond milk)
- 1 tsp real vanilla extract
Instructions: - Preheat waffle iron
- Mix all ingredients and blend in blender till well blended and smooth. If batter is too thick add a little milk if too runny, add Plantain Flour.
- Pour onto waffle iron. Remove when cooked through and golden brown on the outside.Serve with your favorite toppings
| Easy Plantain Chocolate Cake Ingredients: - 2 cups Iya Foods Plantain Flour
- 6 Tbsp unsweetened cocoa powder
- 1 cup honey, 1 cup milk (can also use almond milk), 1 cup vanilla yogurt, 2 eggs, 2 tsp baking soda, 1 ½ tsp oil or melted butter, 1 tsp vanilla extract, 3 Tbsp sugar
- ¼ tsp salt, 1 cup hot water
Instructions: - Preheat oven to 350 degrees F. Grease a 7x11-inch baking pan with a little oil and line with parchment paper.
- Blend all ingredients (except hot water) together till smooth. Then in a bowl gently and carefully mix in the hot water
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Let cool completely in the baking dish.
