Fonio Comfort Pancakes

Ingredients

• 1 ½ cups Iya Foods Fonio Flour
• 1 cup Iya Foods Cassava Flour
• 3 eggs, 2 cups milk (any milk)
• ½ cup oil, 1/2cup water, 2 tsp baking powder, 1 Tbsp Honey
• ¼ tsp salt, 1 tsp vanilla – optional

Instructions

1. Mix all dry ingredients then add all wet ingredients. Tip – use blender
2. Heat gridle or pan ad make pancakes till brown on both sides
3. Tip: add flour if too runny or add more water if too thick

Instant Pot Chickpea Soup

Ingredients

• 2-3 cups cooked chickpeas (can swap with cooked beans)
• 1 cup tomato sauce
• 1 cup Iya Foods FonioFlour
• 1 tsp Iya Foods Garlic with Garlic Skin seasoning
• 1 tsp Iya Foods Chili Flakes, 1 tsp sea salt
• 6 cups water chicken stock (or water)

Instructions

1. Combine all ingredients including cooked chickpeas in an Instant Pot. Set for soup or 20 mins
2. Once complete, cautiously allow pressure to release then open. Let simmer for 5 mins. Serve hot with naan or fresh bread if desired

Creamy Fonio Pudding (a fun take on rice pudding)

Ingredients

• 4 ½ cup milk (can swap with coconut, almond or oat milk), ¾ cup Iya Foods Fonio flour
• ½ cup Sugar, 2 Tbsp Rosewater, 1 tsp Vanilla Extract
• 1 Tbsp Honey (can swap with pure Maple Syrup), 1 Tbsp butter, Topping
• 4 ounces Almonds, ½ tsp Ground cinnamon, 4 cinnamon sticks

Instructions

1. In small bowl slowly whisk fonio flour into approx. half cup of milk (make sure no lumps).
2. In separate pot and on low heat slowly bring to boil the rest of the milk and sugar. Once mix comes to a boil, stir in butter and then stir in the fonio flour & milk mix. Stir well to avoid lump
