So Extra Sea-Food Fried RiceIngredients (2-3 Servings) - 3 cups of rice (long grain or basmati)
- 1 tsp Iya Foods Spicy Fried Rice seasoning
- 1 tsp Iya Foods Turmeric, ½ tsp Iya Foods Whole Garlic, 1 Tbsp Iya Foods Vegetable Mix
- 2 Tbsp Avocado Oil, 2 cups cooked preferred seafood mix
- 1 cup fresh or frozen mixed vegetables of choice, 1 tsp salt to taste, 1.5 cups water or stock
Instructions: - Partially cook rice for 15 mins using medium pan, rice cooker or instant pot. 15 mins is good because we want the rice only partially done
- Heat oil in large pan then add partially cooked rice, spices and seasonings, salt, seafood and the other ingredients
- Stir, cover and let simmer for about 10 mins till rice is fully cooked. Serve hot
| Instant Pot Chicken Coconut Curry Ingredients Makes about 6 servings: - 2 lbs. boneless chicken breast – cut into bite sized, 2 cups cubed butternut squash or potatoes, 3 tbsp coconut oil or butter, 1 cup coconut milk, 2 tbsp curry paste (or curry seasoning), 3 Tbsp Iya Foods Spicy Coconut, 1 tsp Iya Foods Garlic with Garlic Skin, ½ tsp Iya Foods Ginger Ground, ¾ tsp Iya Foods Turmeric Ground, ¼ cup Iya Foods Butternut Squash Powder, 1 cup chopped onions, 1 large bay leaf, ¼ cup fresh cilantro, 1.5 tsp salt to taste, 2 cups water or chicken broth
Instructions - Combine all ingredients except cilantro in Instant-Pot and cook on high for about 15mins
- Garnish with Cilantro and serve hot with rice
- In medium pot heat coconut oil
- Next add chicken, squash or potato cubes, onions, all the spices and water - Let cook for 20 mins or until fully cooked.
- Add all the other ingredients. Taste for salt. Let cook for another 7 – 10 mins on low
- Serve with any rice and garnish with chopped cilantro
| Hibiscus Turmeric Ginger Tea:Ingredients (2 Servings): - 2 cups water
- ½ tsp Iya Foods ground turmeric
- ½ tsp Iya Foods ground ginger
- ½ tsp Iya Foods dried hibiscus flower powder
- 1 Tbsp honey or desired sweetener
Instructions: - Bring water to a boil then add hibiscus powder, turmeric & ginger
- Strain tea into a large cup – add honey or sweetener if desired.
- Serve hot or cold.
