Green mango powder, also known as amchoor, is a citrusy seasoning made from dried unripe green mangoes. The fruit are peeled, thinly sliced, then sun dried. Finally, they are ground into fine powder. The fragrance smells similar to honey and the taste is sour and fruity. Some enthusiasts consider it a perfect balance of sweet and sour. The spice is used widely in north Indian dishes, finds its way into samosa and pakora fillings, as well as being featured in stews, fruit salads, pastries, curries, chutneys and pickles.
