Street Corn Jalapeño Dip with Mission Organics Blue Corn Tortilla Chips
Ingredients
· Mission Organics Blue Corn Tortilla Chips
· 10 oz. corn kernels
· 2 jalapeños, diced
· 1 can green chiles (4 oz.), drained
· 1 tbsp. vegetable oil
· ½ tsp. salt
· 2 cups shredded pepper jack cheese, divided
· ½ cup mayonnaise
· ½ cup sour cream
· 2 green onions, finely chopped
Instructions
Preheat the broiler. On a baking sheet, combine the corn, jalapeños, green chiles, oil, and salt. Broil 8-10 minutes until the corn is lightly browned. Reduce the oven temperature to 425º F. In a medium bowl combine 1 cup of pepper jack, mayonnaise, and sour cream. Stir in the corn mixture and transfer to a small baking dish.
Sprinkle with the remaining 1 cup pepper Jack. Return to the oven for about 10 minutes until the cheese is melted and the dip is bubbly. Sprinkle with green onion and serve with Mission Organics Blue Corn Tortilla Chips.
