Use Judee's Gluten Free Expandex Modified Tapioca Starch in your gluten free flour blends. Expandex is not a 1:1 replacement for flours that contain gluten. It performs best when used as a substitute for a portion of other gluten free starches in gluten free recipes and mixes. Use Potato Starch to coat fried chicken, thicken sauces, and/or use in making your own gluten-free flour blends. For Gluten Free Flour Blends: Corn Starch lightens the texture of gluten free baked goods. Use in combination with other GF starches and flours For thickening sauces: Use 1 Tbsp Corn Starch per cup of gravy or dairy based sauce(alfredo). First mix 1 Tbsp Corn Starch and 1 Tbsp water into a paste, then add it to the sauce. It will thicken very quickly as high temperatures. Stir constantly.
