EDDE Icing Fondant for Glazing Pastries
Unlike the more-familiar fondant that you roll to 1/8 inch in thickness and drape over a cake, this icing fondant (what you might call "soft fondant") — note its simple makeup of only sugar, glucose and water — is similar to the icing spread on donuts and Mille feuilles and drizzled on coffee cakes.
This fondant, a sticky solid at room temperature (with no need to add water though some do), is heated into a semi-liquid and then placed on pastries. Apply with a spoon (not a brush) or dip pastries in it.
This icing fondant will slightly harden when it cools.
