One of the "Three C's". This well-rounded dual purpose hop is a high alpha varietal with a neutral bitterness and intense amazing aroma due to the high oil profile. Floral, Pine, Pineapple, Orange Citrus and Cannabis notes come out in both aroma and flavor, but can be very pungent, which makes Columbus great for late additions to a boil or dry-hopping. Columbus is a perfect choice for IPAs, Imperial Ales, Stouts, and Barleywine. Also referred to as Tomahawk, Zeus, or CTZ. Sometimes called a Super Cascade, it smacks a wallop, for hop lovers only.
Columbus is easy to spot in commercial beers. The aroma is the same you would expect at a Phish concert. Columbus was developed by Charles Zimmermann while working for the USDA. He resigned and the hop was leaked. Both Yakima Chief and Hop Union tried to patent the same hop and there was a lawsuit. Yakima Chief named theirs Tomahawk and Hop Union calls theirs Columbus. An agreement was reached and both distributors market the same hop under different names. Confusing? I think not. Disturbing? Perhaps.
Gas chromatography has disclosed that Columbus and Tomahawk are the exact same thing, but that Zeus (Marketed by HopSteiner) is just a tad different. But its characteristics are so close to Columbus and Tomahawk that the nickname CTZ (Columbus, Tomahawk, Zeus) has become the accepted way to refer to all three.
