Cooking or baking with whole vanilla bean pods is an excellent way to add the full complex range of vanilla flavor to your favorite recipes. To prepare a vanilla bean for use, do the following:
1. Split the bean in half by slicing a slit in the bean from one end to the other.
2. Spread the bean apart to expose the seeds and scrape them out with the dull side of the knife.
3. Scrape the beans off the knife and into a small dish, then repeat with the other half of the bean.
Delicious vanilla flavor is found in both the bean and the seeds, so you can use both depending on the application. For example, you can boil the scraped vanilla bean in milk or heavy cream to extract the flavor or place it in a jar of sugar to create vanilla flavored sugar. As long as the bean still possesses its characteristic aroma and is moist and pliable, you can rinse, dry and use it again. One whole vanilla bean is equivalent to one tablespoon of vanilla extract, vanilla bean paste, or vanilla bean powder.
