Chicken Mole
Mix 1 part mole blend with 2 parts liquid to get an authentic Mexican flavor.
1) Preheat oven to 350 degrees.
2) Rinse chicken in cold water and pat dry.
3) Generously coat chicken with salt and pepper and place in an oven safe pan.
4) Cover and cook for about 1 1/2 hours or until the chicken is cooked all the way through.
5) Once chicken is cooked, remove the lid and lightly brown the skin, remove from oven and let sit for 10 minutes.
6) While the chicken is cooling, make the mole sauce by combing mole blend and broth. Simmer until it reaches the desired consistency.
7) Carve chicken and place on individual serving plates. Finish by pouring the mole sauce over the chicken. Garnish with sesame seeds and serve with rice.
