South Chicago Thin Pizza Sauce

South Chicago Thin pizza is made without edges. The sauce is often mixed with crumbled sausage (optional), placed on the dough skin with other toppings, and topped with cheese.
Ingredients
2 cans Tomato Magic Ground Tomatoes
1 can Full Red Tomato Puree
¾ cup Corto Extra Virgin Olive Oil
¾ cup honey
½ cup fresh oregano, chopped
½ cup fresh basil, chopped
2 tablespoons fresh garlic, minced
2 tablespoons salt
1 ½ teaspoons black pepper
Mix all ingredients in a stainless steel bowl. Makes 39 cups of sauce.

California Pizza Sauce

This extra flavorful sauce provides bold seasoning, which pairs nicely with California pizza.
Ingredients
3 cans 7/11 Ground Tomatoes
2 cans Full Red Pizza Sauce
1 ½ cups Corto Extra Virgin Olive Oil
25 cloves fresh garlic, minced fine
½ cup fresh basil, chopped
½ cup fresh oregano, chopped
3 tablespoons red pepper flakes
½ cup salt (to taste)
Mix all ingredients in a stainless steel bowl. Makes 66 cups of sauce.
