Texas Style Chili
Molly’s signature blend of three types of ground chiles: ancho, New Mexico and smoked paprika provides mild heat for a satisfying bowl of Texas-style chili
1) Prepare the beef by trimming off excess fat and cut into ½ inch chunks. Heat 4 tbsp. oil in a large pot over medium heat.
2) Season the beef with salt and pepper, add to the pot and cook over medium heat, stirring occasionally until all of the pieces are browned. Remove and set aside.
3) While the beef is browning, prepare vegetables.
4) Using the same pot, add remaining 2 tbsp. olive oil and lightly sautee onions, peppers, and garlic.
5) Return the beef and add the remaining ingredients except the beans, stirring well.
6) Simmer uncovered for 3 hours stirring occasionally. Add the beans and season to taste. Simmer 30 minutes more. If the chili becomes too thick, add more beef stock.
7) Ladle into bowls and tope with cheese and green onions.
