Capona- 2/3 c Olive Oil
- 3 Tbsp Bravado Spice Serrano & Basil Hot Sauce
- 1 c Chopped onion
- 1 c Chopped celery
- 1 c Chopped red bell pepper
- 3 c Eggplant, 1 in. cubes
- 2 tsp Salt
- 1 1/2 c Tomato, chopped
- 1 tbsp Garlic
- 1/2 Olives, halved
- 2 Tbsp capers
- 1/4 White wine vinegar
- 1 Tbsp Sugar
- Heat the oil over medium heat in a 5-6 quart pot.
- Add the onion and celery, and bell pepper to the pot and let them cook until the onions just begin to turn translucent.
- Add the eggplant and salt. Mix well and let cook until the eggplant begins to soften.
- Add the tomatoes, garlic, olives, capers, vinegar, sugar, and Bravado Spice Serrano & Basil Hot Sauce. Combine and let the caponata cook down a few minutes until the eggplant become soft.
- Serve with crusty bread. Enjoy!
Makes 6-8 Servings Cook time: 30 minutes | Spicy Tomato Basil Soup- 2.5 lbs Beefsteak tomatoes
- 2 oz Bravado Spice Serrano & Basil Hot Sauce
- 1/2 c Red tomatoes, sliced
- 2 tbsp Olive oil
- 4 oz Cream
- 8-10 Garlic cloves
- 5-7 Leaves fresh basil
- - Salt
- - Pepper
1. Quarter the tomatoes, and lay out on a baking sheet along with the onions and garlic. Lightly oil, salt, & pepper. Preheat oven to 400°. 2. Bake the veggies for about 25 minutes, and then broil for about 5 more. Remove from the oven and let cool till warm. 3. Add the roasted veggies to a blender along with their juices and Bravado Spice Serrano & Basil Hot Sauce and blend on high. 4. Once thoroughly blended, add the soup mixture to a sauce pot along with the cream and cook for about 10-15 minutes. While the soup reduces, roll up the basil leaves and chiffonade. Add to soup. 5. Serve the soup immedately; ideally with some garlic bread and garnished some basil. | Fried Mac & Cheese- 6 c Cooked mac & cheese, chilled
- 2 oz Bravado Spice Serrano & Basil Hot Sauce (can also be made with Crimson Hot Sauce)
- 1/3 c Ranch Dressing
- 2 c All purpose flour
- 4 Eggs, beaten
- 2 c Bread crumbs
- 1 qt Vegetable oil
- 1/4 c Chopped parsley
1. Scoop out about a 1/3 cup ball of chilled mac & cheese. An ice cream scoop will do the job well. Form into a tight ball. 2. Roll the mac & cheese ball in the flour shake off the excess, and then repeat with the egg wash, and then the bread crumbs. 3. Pour the oil into a pot and heat up to 350° F. 4. Using a slotted spoon or tongs, place the mac & cheese balls into the hot oil to fry, turning occasionally until they are golden brown all over. Then remove from the oil and drain on paper towels. 5. In a small bowl, mix the ranch dressing and Bravado Spice Serrano & Basil Hot Sauce until well blended. This will be your dipping sauce. 6. Gently top the warm balls with a bit more Bravado Spice Serrano & Basil Hot Sauce and serve. |
