It is most commonly used in Indian cusines, particularly in brased lamb dishes. We most commonly see nigella seeds sprincled on top of naan before it is baked. It is also a common ingredients in some Garam Masalas, and is one of the ingredients in Panch Phoran. The seeds may be used whole or ground. It is comon to fry or roast the seeds before using them.
