Appenzeller is a cow's milk cheese produced in the mountains of Switzerland. It's most recognizable feature is the tan color of its rind. This color comes from the secret brew that the wheels are bathed in as they age. The concoction isaste of a semi hard Swiss cheese with small to medium sized holes. Appenzeller Cheese has a sharp flavor profile, with traces of spicy and herbaceous flavors left by its secret marinade, and a distinctly fruity tang. Appenzeller makes up one third of the Swiss' classic fondue trio and melts exceptionally well. Try pairing this cheese with a Merlot or a Sauvignon Blanc.
