Irish Moss is a thicker and emulsifier that does not need any boiling. May be used to fluff up or firm liquids, shakes, parfaits, mousse, and ice cream. Preparation: Rinse and clean well a small handful of moss (check for and rinse of ant sand or debris) and soak from 4-12 hours at room temperature, rinsing a few more times. The moss will turn a creamy to translucent color, feel slippery, soft, and double its volume. Measure 1 cup of moss with 1.5 - 2 cups of water and blend it smooth and creamy. Store this gel-like moss in the fridge in a glass container. It will keep fresh for up to 3 weeks. When you add the moss to your recipe, it will take about an hour in the fridge to firm up.
