Incredible Veggie Fritters or Cutlets Ingredients: - 1.5 cups vegetable stock
- 1 cup Iya Foods Vegetable Mix
- 2 cups fresh chopped vegetables (Broccoli, Cauliflower, Kale or any vegetable mix)
- 1/2 -3/4 cup Cassava Flour
- 1/3 cup Parmesan Cheese, 1 tsp salt, A pinch Chili Pepper Ground, A pinch Yellow Habaneros (this pepper is hot), ¼ teaspoon Whole Garlic Ground, 3 Tbsp green onions, 1 large egg, whisked, 2 Tbsp Avocado Oil
Instructions: - In medium sized pot, bring vegetable stock and dried vegetable mix to boil. Then add freshly chopped Veggies - Steam on low for 5 more mins
- Mix in flour, cheese and all the other ingredients, whisked eggs last. If too thick add some water 1 tbsp at a time. If too runny, add some more cassava flour. Next form fritter mixture into approx. tennis size balls
- Then heat a nonstick skillet with a little avocado oil - Then place fritters balls into pan, flatten with spatula and cook on each side for about 4 mins or until golden brown.Transfer to a bowl lined with paper towels to soak up excess oil.
| One-Pot Everything SoupIngredients: - 10 cups Chicken Broth (Can swap with any broth)
- 4 cups chopped or shredded fully cooked chicken
- 2 cups Iya Foods Vegetable Mix
- 2 Tbsp Iya Foods Pepper-Soup Mix, A pinch Iya Foods Chili Pepper Flakes
- 2 cups any mixed vegetable of choice (tip - grab a pack of frozen mixed veggies), 2 medium potatoes diced, 2 Tbsp Iya Foods Cauliflower Powder to thicken soup if desired, About 1 tsp of salt
Instructions: - Bring broth to boil in large pot
- Add all the other ingredients - Reduce heat and simmer on low for about 15 mins
- Next stir in cooked chicken and cook for another 5 mins Serve hot with bread if desired. Tip – can use your instant pot
| One-Pot Pasta Ingredients: - 1 lb. smoked sausages cut into bite sized slices
- 3 cups penne pasta uncooked
- 2 cups chicken stock
- 2 Tbsp Iya Foods Vegetable Mix
- 2 cups fresh spinach, 1 Tbsp Iya Foods Jollof Seasoning, 1 tsp Iya Foods Whole Garlic Powder, 1 cup sliced mushrooms, ½ cup chopped onions, 1 chopped red bell pepper, 2 cups Monterey Jack cheese, ½ cup Parmesan cheese
Instructions: - Bring stock to boil in medium pot over medium heat
- Next add Iya Foods vegetable mix, penne pasta, sausage, onions, garlic, and mushrooms, peppers and spices. Stir and cook for about 5 mins or until penne pasta is al dente
- Stir in the cheeses and fresh spinach and let cook for about 2 – 3 mins. Serve hot
