After moving to the United States, Cuong Pham was hungry to recreate the tastes and smells of his childhood in Saigon. But not even the vibrant Asian markets of San Francisco offered the intensely fragrant first-press fish sauce, nước mắm nhi, that Cuong remembered from Vietnam. So in 2006, Cuong decided that if he couldn't find it, he would make it — and started Red Boat Fish Sauce. Returning to Vietnam, Cuong expanded a small, family-run facility on the tropical island of Phu Quoc.

With its clear waters and traditional fishing communities, Phu Quoc has long been renown for producing the world's greatest fish sauces. The Red Boat Process

CATCH

Red Boat's fleet catches black anchovies off the coast of Phu Quoc, Vietnam.

SALT

Upon catching, anchovies are salted immediately within 15 minutes to preserve freshness.

FERMENT

Anchovies are brought back to the barrelhouse and fermented for 12 months. Each barrel holds 13 tons of black anchovies.

PRESS

After fermentation is complete, this first extraction from the barrel (called the first-press) is completed and bottled.

Red Boat contains 2.5 lbs of anchovies per bottle, giving our fish sauce a beautiful amber color from the healthy concentration of anchovies. Red Boat contains 4 grams of protein per tablespoon, twice the amount of protein of most fish sauce you’ll find on the market.

Preparation

Preheat oven to 425 degrees. Peel and finely chop ginger. In a large bowl, combine all ingredients for meatballs. Scoop balls, the size of large walnuts, and place on a parchment-lined sheet tray. Bake meatballs until just cooked through, 10 minutes.

For the meatballs:

  • 2 pounds pork shoulder, ground
  • 1 ounce ginger
  • 2 medium cloves garlic
  • 1 tablespoon Red Boat 40°N fish sauce
  • 2 teaspoon salt
  • 2 eggs
  • 3 tablespoons panko breadcrumbs
