- Chef tip:After spraying the griddle or pan with a nonstick pan spray, lightly wipe the oil across the surface with a towel. This helps to evenly distribute the oil resulting in a more uniform color for the pancake.
- When ladling pancake mix onto the grill, tilt the ladle, and then pour it from about 10 inches above the grill with a steady motion. This will ensure the pancakes form into a nice, even circles.
- Watch the edge. The easiest way to tell if your pancake is ready to ip is to watch its edge. Once the edge is no longer shiny, you know the underside is done and it is time to ip your pancake.
