The history of Altos de Iberia dates back to the end of the 19th century and has been projected for more than 100 years through 4 generations of Master Jamoneros . From our old Bernuy dryers in the Sierra de Guadarrama to being a benchmark in the sector within and outside of Spain. An achievement of intense work and desire to improve. In 2006 we obtained the Export authorization to the United States. Of our sales, 40% correspond to foreign markets. From their own drying halls in Segovia, Spain, Monte Nevado Serrano Hams are cured from specially selected raw materials reproducing the four seasons of the year in a controlled climate. This achieves a complete and flavorful product, a true source of nutritional values. Monte Nevado vintage serrano hams are cured 20 months, when each joint rests in their dark, silent cellars at room temperature. For centuries, Jamon Serrano, has been something that has marked the character of the Spanish. The Legado de Liedos de Altos de Iberia is a quality Serrano ham. Its fat content allows it to heal slowly and naturally with the air of the mountains that surround the Altos de Iberia wineries. It is characterized by being a cured ham with little salt. Without missing these principles, Legado de Liedos is the smallest and with the least fat of the ones we make in Altos de Iberia, which is why it needs less time to mature. Even so, it has an average curing time that exceeds 15 months.
