Bleu d'Auvergne has been made the same way in the Auvergne region in south-central France since the nineteenth century. France is so protective of their precious Bleu d'Auvergne that it is one of the few cheeses that have been name protect notes along the way. Use Auvergne instead of your usual blue cheese to give an old recipe a new life; crumble it on top of your favorite salad, or melt it down into a cream sauce for a big juicy steak. If you're feeling low maintenance, spread a chunk of Auvergne on some crusty Italian bread and pour yourself a dessert wine, like a nice glass of Sauternes.
