Beef Ramen Noodles with Sesame and Ginger

In 5-quart Dutch oven, heat 1 Tbs vegetable oil over medium-high heat. Add 1 lb lean ground beef and 1 cup thinly sliced onions; cook 7 to 9 minutes, stirring frequently, until beef is browned; drain. Stir in 1 Tbs finely chopped, peeled gingerroot, 2 Tbs soy sauce, 1 Tbs sesame oil and 1 Tbs Sriracha sauce. Stir in 2 1/2 c beef flavored broth; heat to simmering. Add 3 pkgs Ramen noodles - any flavor (discard flavor packets or reserve for another use) and 1 - 6 oz pkg snow peas; heat to simmering. Reduce heat to medium; cook uncovered 4 to 6 minutes longer, stirring frequently, until noodles soften and liquid is absorbed. Stir in 2 Tbs sesame seed. Top with 1/4 c cilantro. Serve with lime wedges.

Teriyaki Chicken Ramen Noodles

Using a deep dish pot, place 2 bricks of ramen noodles (remove seasoning packets), 2 cups cooked, diced chicken, and green onions inside. Add 1/2 c soy sauce, 1 c water, 2 Tbs cornstarch, 1/4 c brown sugar, 2 Tbs rice vinegar and 2 cloves minced garlic. Cover and cook on medium high heat for about 10 minutes until the noodles are tender and the sauce thickens. Serve hot and garnish with green onions and sesame! Enjoy!

Crunchy Asian Ramen Noodle Salad

Heat oven to 425°F. Spread 2 pkgs crumbled ramen noodles (no seasoning) and 1/2 c thinly sliced almonds on baking sheet. Stir to combine. Bake until the almonds and noodles are slightly toasted and golden. Remove baking sheet. Stir to toss. Return to the oven; toast for 3 minutes. Watch mixture so that it does not burn. Remove and set aside. Add nut and noodle mixture; 16-ounce bag coleslaw mix; 1 c shelled, cooked edamame; 1 avocado, peeled, pitted, diced; 1 mango, peeled, pitted, diced; 1/2 c thinly-sliced green onions; and vinaigrette (recipe following) together in a large bowl. Toss until combined. Serve immediately, or cover and refrigerate for up to 3 days. Vinaigrette: 1/2 c vegetable oil; 1/4 c honey; 1/4 c rice vinegar; 2 tsp soy sauce; 1/4 tsp toasted sesame oil; pinch of salt and black pepper. Whisk to combine.

Peanut Chicken Ramen

Boil 2 packages chicken-flavored ramen noodles and seasoning mix according to package directions. Drain pasta but reserve 1/3 cup pasta water. In a small bowl, whisk together 1/2 c crunchy peanut butter and 2 Tbs soy sauce. Add a couple tablespoons of water to thin it out if needed. Add the peanut butter mixture and 1 1/2 c shredded chicken to the noodles. Toss to combine. Add as much pasta water as needed to thin the sauce. Serve as is, or garnished with sliced scallions.
