In Sardinia olive oil has been one of the main crops for thousands of years. San Giuliano DOP Sardinia Extra Virgin is an olive oil selection which preserves all the qualities and distinguishing flavours and aromas of Sardinian oils. The production specification of Protected Designation of Origin ensures that only products genuinely originating on the island of Sardinia produce the unique qualities of this oil. OLIVE VARIETIES Obtained by cold pressing the very best Bosana olive fruits, and to a lesser extent Semidana cultivar. ORIGIN Mainly comes from the Alghero countryside and North Sardinia in general (Italy). PROCESS OF TRANSFORMATION The olives are specially selected and mechanically harvested directly from the trees during the months of October and November, then cold pressed with granite millstones using a continuous cycle system and decanting naturally without filtering. The polyphenolic substances and antioxidants which are present in great quantities in the extra virgin olive oil are best preserved by this harvesting method. SENSORY CHARACTERISTICS A beautiful intense golden yellow colour with hues of emerald. The aroma is subtle, with floral hints of fresh grass, apple and banana. To the palate it is definite and ample, characterized by hints of artichoke, wild cardoon and green tomato; spicy notes present and well-balanced. CULINARY USES DOP Sardinia San Giuliano Extra Virgin Olive Oil is excellent on soups, ideal on vegetable starters and perfect with salted fish and grilled meats.
