  • Is Tapioca same thing as cassava flour? No. Cassava flour and tapioca flour are different items even though a lot of people use these two terms interchangeably. Tapioca is a starch extracted from cassava root while cassava is the entire root as a flour and usually has more fiber etc.
  • How do you bake with Tapioca flour? You can swap tapioca flour with any flour in approx. ¾ cup to 1 cup ratio (for fluffy recipes) or 1:1 (for thicker, more dense recipes). Depending on the recipe, we suggest you start with ¾ cup tapioca flour/starch to 1 cup if you are not sure about what works best for your recipe because it’s easier to add a little more flour i.e. ¼ cup more if needed.
  • How do you swap with corn starch? 0.5:1 i.e. Use 0.5 cup tapioca starch to 1 cup corn starch. 2 Tbsp tapioca flour = 1 Tbsp corn starch.
  • Is there cyanide in Tapioca flour/starch? No. There is no cyanide in our Tapioca flour/starch. Our automated process removes all naturally occurring cyanide. We also test every single batch in a third-party accredited lab to ensure our tapioca flour is ready to enjoy. Fresh raw cassava root has naturally occurring cyanide similar to cyanide found in almonds, spinach, apples etc. This naturally occurring cyanide is mostly in the peel which is 100% removed during tapioca production. Tapioca flour is not raw cassava, it has gone through 100% automated, state-of-the-art peeling, washing, soaking, milling, drying etc. to turn into flour/starch. The peeling, heat and drying process removes any cyanide. We also lab test our tapioca flour is the SQF certified in-house lab and a second time again in a standardized, certified, independent food lab for your confidence. Tapioca flour is safe which is why so many people love and have been eating it for generations.
  • Where do you source your cassava root – Nigeria, West Africa. Nigeria is the #1 grower and producer of cassava root in the world with approximately 60 million metric tons of cassava grown annually. Our founder, Toyin Kolawole is a Nigerian American, born in Nigeria so she grew up eating cassava root in many recipes and loves it, our tapioca flour is one of her favorite allergen-free flours to use.
